HISTORY of SOUVLAKI
Greece is well known for its delicious cuisine and healthy Mediterranean diet, but what about its fast food? Everyone who has visited the country has tasted at least once the famous “souvlaki” or “souvlaki with pita” or “pita gyros,” three dishes combining meat in a very tasteful dish that has become a trademark of the modern Greek culture over the years along with other products such as the frappe, ouzo, retsina and feta cheese. The word souvlaki is a diminutive of the Greek souvla (spit), itself borrowed from the Latin word subula. But the origins of souvlaki date back to ancient Greece. Souvlaki became popular in the 1960’s and 70’s in Greece more prominently in the city of Athens. Driven by the popularity of fast food, souvlaki became the prominent fast food along with Gyro’s. Originally the Gyro consisted of various cuts of meat ( primarily lamb & pork, sometimes boneless chicken and beef) skewered on horizontal rotisserie. One of the reasons this Greek version of fast food was so popular is because the freshness due to the fact that as patrons ordered the Gyro the new layer began to cook from the rotisserie effect. So each order was fresh and the meat did not begin to cook until the next order was peeled from the cone of meat. Souvlaki has become one of the more popular fast foods in Europe and is now becoming popular in Singapore!!!.
